Fossa Cheese Fair – Sogliano al Rubicone
Sunday 21, 28 November and 5 December 2021 to celebrate the Fossa cheese
The last two Sundays of November and the first Sunday of December, Sogliano al Rubicone hosts the Fossa Cheese Fair (Cheese of the Pit).
This year the 46th edition takes place on Sundays November 21st and 28th and December 5th 2021.
Many collateral events animate the streets of the city center during the three days of the fair: permanent exhibitions, shows, conferences, guided tours, activities, entertainment for children and music.
There are also stands where visitors can taste and buy both pit cheese and many further local products such as savor, saba, honey, cured meats.
Cheese of the Pit is a seasoned cheese traditionally produced in Romagna, and is so called because it was sunk for three months during the summer so that it could be used in the winter.
During the three months of maturation, the sunken cheese undergoes a refermentation which gives it an intense aroma and taste.
In the kitchen it can be grated over pasta or combined with honey and figs. It has been considered a product of Romagna excellence since the eighteenth century.
The traditional opening of the pits once took place on November 25, the day of Saint Catherine of Alexandria. On this day, after harvesting and sowing, after the harvest and the pressing of the olives, the farmers prepared for the winter and collected the cheese sunk into the pits during the summer to cope with the winter.
The Fossa Cheese Fair was born in 1974 precisely to preserve this tradition.
In 2009, the Fossa di Sogliano cheese obtained the PDO mark.
